Over the last ten years, the Agricultural Marketing Service (AMS) has transformed as an agency.  Of course, the core mission is still there—facilitating the domestic and international marketing of U.S. agricultural products—but how we accomplish that mission is an evolutionary process. 

Our agency serves many different stakeholders.  From consumers to industry councils, state inspectors to non-profits, we offer a broad range of services, information, grants, and regulatory oversight that are critical to the agricultural economy and the quality of our nation’s food supply.

USDA Grain Inspectors Work to Uphold America's Reputation for Quality, Support New Markets

As America’s leadership role in the global economy increases, shipments of American grain, oil seeds, and related agricultural products could continue expanding into promising markets in some of the world’s most robust economies. Facilitating the marketing of U.S. grain exports by thorough inspection and weight certification in accordance with Federal law is the job of the Grain Inspection, Packers, and Stockyard Administration (GIPSA) through its Federal Grain Inspection Service (FGIS).

A team of dedicated professionals located around the country ensures that America remains competitive in the world agricultural market by upholding the quality of U.S. grain as well as the integrity of U.S. grading standards. Working shifts around the clock in export elevators loading ocean vessels and in interior locations loading shipping containers along the Great Lakes, the Gulf of Mexico, on coastal and other locations, FGIS personnel along with delegated states and designated agencies inspect and weigh grain arriving daily by truck, rail, and barge for domestic markets and export by cargo ships. Once loading is complete, FGIS inspectors provide an official certificate backed by the reputation and authority of the U.S. Government.

June is an eventful and versatile month—the start of warm summer days, school vacations, and holidays like Father’s Day and Flag Day.  We also celebrate many unusual observances in June such as Heimlich Maneuver Day, National Yo-Yo Day, and National Donut Day. But who can enjoy a donut without a nice, cold glass of milk?  June is the perfect month to combine the two as USDA joins the rest of the country in celebrating National Dairy Month.

For more than 75 years, we have celebrated dairy and all of its goodness during June.  What started out as National Milk Month in 1937 to promote milk consumption and stabilize the dairy demand has turned into a month-long celebration and tradition that acknowledges the dairy industry’s contributions to the United States and around the world.

Industry & Government Benefit from Streamlined User-Fee Rulemaking

USDA’s Agricultural Marketing Service (AMS) provides voluntary grading, inspection, laboratory analysis, audit verification and certification services for meat, poultry and egg establishments, fruit and vegetable handlers and processors, dairy processors, cotton producers and other parts of the agriculture sector to facilitate marketing and communicate quality attributes to consumers.

AMS quality assurance programs tell consumers and businesses that an impartial, unbiased third-party has assessed the quality and verified various aspects of their products.  Through the delivery of these programs AMS facilitates marketing of more than $150 billion worth of agricultural products that help to fuel America’s agricultural economy.

Excellence in Taste and Flavor: American Kobe-Style Beef

When consumers hear the term Kobe, the first thought that comes to mind is typically not a city in Japan, but rather a juicy steak right off the grill.  Kobe beef is globally renowned for its rich flavor, juiciness, and tenderness or high marbling content.  Kobe beef is cuts of beef from the Tajima strain of Wagyu cattle (which mean Japanese cattle), raised in Kobe, Japan.  But did you know you can find Kobe-style beef produced right here in the United States?

Since 1994, U.S. producers have worked to offer American Kobe-style beef that features the same characteristics, marbling and flavor that defines Japan’s Kobe beef by bringing herds of Kryoshi and Akaushi breeds of Wagyu cattle to the United States.  The same closed herd and multi-trait selection process used for Kobe beef was adopted and is now used by various U.S. trade associations (American Akaushi Association, the American Wagyu Association, and the Texas Wagyu Association) that promote and uphold the industry standards. Highly prized for their rich flavor, these cattle produce what some would argue is among the finest beef in the world.

USDA Working with Serbian Meat Industry to Facilitate Trade

USDA’s Agricultural Marketing Service has the vital mission helping market American agricultural products competitively in the marketplace.  One way AMS meets this mission is through our globally recognized meat standards.  AMS has participated in the United Nations Economic Commission for Europe (UNECE) for many years to help develop global agricultural quality standards that facilitate trade – essentially ensuring everyone speaks the same trade language.

Recently, AMS traveled to Serbia to provide technical assistance to the Serbian Government and meat industry.  In cooperation with the USDA’s Foreign Agriculture Service (FAS), AMS has worked with Serbia to help modernize their meat standards and specifications.

Exciting New Markets Open Up For Dairy Farmers Across the U.S.

Every June, USDA joins the rest of the country to celebrate Dairy Month. It is a time to thank our nation’s dairy producers and processors for their tireless work to produce quality dairy products like milk, cheese, and yogurt. Here at USDA, besides getting our fill of our favorite dairy products, we celebrate our nation’s dairy industry every day by finding new markets where people can enjoy their products. This often entails working with other countries’ governments to negotiate export and import requirements as well as helping businesses meet these requirements.

Our nation’s dairy exporters reach new markets with the help of the Agricultural Marketing Service (AMS). Export certificates are often the critical piece in the trade puzzle. On this front, AMS offers certificates for more than 80% of the countries that accept U.S. dairy exports. Our Dairy Programs can verify that businesses’ dairy products meet export requirements. The AMS Dairy Grading Branch provides export certificates for products or conditions for which they have documentation for or from plants they inspect.

Picking a Winner Part II - More Tips and Insights for Selecting Seasonal Produce

We all have our own methods and traditions for selecting fresh produce, especially as the weather gets warmer and our stores and markets are full of fresh seasonal offerings. Whether it’s smelling the rind or checking the firmness of the skin, these age-old practices are all designed to help pick the winning ingredients for snacks and meals.  Last spring, we provided tips for buying artichokes, apricots, broccoli, cherries, and strawberries. This time around, we will focus on some other seasonal favorites.

Whether it is part of a fruit salad or eaten by itself, cantaloupe is always a hit during the summer months. When purchasing a cantaloupe, make sure that its rind is light green or turning yellow. Ripe cantaloupes should yield to light pressure and have a sweet aroma. Most cantaloupes need to be kept in the refrigerator for 2-4 days before eating. Some may prefer to eat their cantaloupes at room temperature, while others like theirs after leaving it in the refrigerator for a few hours.

Beef Up Your Knowledge: Meat Marbling 101

Grilling season is upon us.  It’s time to enjoy that wonderful smell of meat cooking across neighborhood backyards. With so many choices available at your store and meat counter, choosing the best cut of meat for your dish can be overwhelming. With a bit of beef knowledge, you can avoid that problem, and be the king or queen of the barbeque.

We’ve covered the basics of USDA beef grades, explaining the difference between USDA Prime, Choice or Select. This time around, we’re going to look at the marbling – or fine threads of fat – within different grades of meat.  Marbling is what gives beef its flavor, juiciness and tenderness.  USDA’s Agricultural Marketing Service (AMS) employs 200 highly-skilled beef graders who, sometimes with the help of electronic monitoring, evaluate several factors that determine the grade, including the amount and distribution of marbling.

USDA Innovation Improves Rice Grading

With a little help from USDA, consumer-grade photo scanners could revolutionize rice grading.

Consumers much prefer whole kernels of milled rice over broken pieces.  Whole kernels offer more consistent cooking qualities and are in many cases considered more visually appealing.  As a result, the price paid to a rice producer for a load of rough rice can be impacted by the percentage of broken kernels within a sample of rice after it has been milled.

USDA’s Grain Inspection, Packers and Stockyards Administration is developing software for use with consumer-grade photo scanners to measure the percent of broken kernels in milled rice quickly and accurately.   When rough rice is graded in accordance with USDA’s Rice Grading Standards, the percentage of broken kernels within a sample is determined by a trained grader’s visual inspection.
